Let me tell you something, staying healthy in college IS NOT EASY! Personally I have found a strong correlation between eating healthy and working out. When my fitness level is high, I tend to crave healthier food because its what gives me the energy I need yet the second I stop working out, I gravitate towards that bag of marquette bbq chips. Personally the hardest time to stay healthy for me is after dinner. For some reason after 7o'clock comes, all that calorie and sugar counting goes out the door (is there some scientific reason behind this... if so let me know please) but starting off the day right sets the pace well for the remainder of the day.
One of the biggest struggles with eating healthy in college is time. With all that students are expected to do now a days, its hard to find the time to make these healthy meals. This is probably one of the easiest meals to make and keeps you satisfied throughout the day.
Usually when I get back from practice before I do anything I go and put a pot of water to boil. Since I am usually in a rush in the morning, I typically do stuff while its boiling so I put it on medium heat and drop my stuff off then begin toasting a slice of whole wheat bread and making a cup of coffee. Once the water is at a boil I lower the heat to low (this will slow down the boil, so I wait until its boiling again) then with a colander spoon I mix the water to create a whirlpool effect. Then the egg is carefully slid into the water. I leave it their for a minute or two until it looks cooked and with my colander spoon I gently place tap it on a peace of paper so its not as watery. Once the egg is dried I place it on top of the bread, cut the yolk, add a dash of salt and VIOLA!
In an effort to get fruit into my diet I usually pair this with a small bag of frozen strawberries. I know there is a lot of controversy upon frozen fruits but they don't go bad so I'm more inclined to buy them. I also have my cup of Cafe Bustelo with this. This breakfast is super quick and keeps you satisfied throughout the day.
