If you follow my instagram (@lissa415) you might have noticed I was in Vegas a few weeks back. One of the many amazing things I tried was a frozen mocha hot chocolate from serendipity.
Fast-foward to today and the sweet tooth decided to hit HARD. After venturing to CVS and realizing the freezer was broken (come-on CVS) I scavenged my pantry for whatever dessert I had and threw together this surprisingly good recipe after reading various pinterest boards!

With racing season in full swing on top of school and work I have really been trying, and ultimately struggling with finding quick, healthy budget-friendly meals. On top of this and being an already picky eater, I decided to give up most meat (except poultry), sweets and soda for lent. This limits my options quite a bit when it comes to eating.. My schedule also makes it very hard to prepare foods since I am often out of my room from 6am-9pm except maybe a 30 minute break at some point. With this hectic lifestyle, for lunch I need to find something that is not only quick and easy but also satisfying since its quite likely I wont eat until I return at night. This is the EXACT reason I have been absolutely loving this meal.
I mean its very basic, I typically start off with either vanilla or regular yogurt. Though regular is alot better for you I really dont like it as much so I personally opt. more for vanilla. I then add whatever frozen berries I have lying around the freezer or whatever fresh berries where available at the dining halls, today it was strawberries. I like to top this all off with cranberry, cinnamon granola and some finely milled flax seeds from Trader Joes. In an attempt to be healthy, yet still still satisfy that crap tooth I have I usually like to grab some snap pea crisps. These things are godsent. If I dont control myself I WILL eat an entire bag. They are basically an equivalent to chips but there is something about the texture that is extremely satisfying. To drink I usually go for a glass of water, or today I opted for some gatorade. I know there is a lot of controversy concerning Gatorade, and I completely agree that it is mainly sugar and overused but at a competitive level there are days where its nice to have a sports drink. Typically instead of buying the bottle I just get the powder and add 1/2-1/3 the recommended serving size to its not as sugary. One thing I have really been trying to be conscientious of is my water intake. I drink ALOT of water, especially when I am bored but I have realized there are days I barely get 3 glasses in and so I have been making a real effort to drink a full glass at every meal as well as when I wake up and before bed and it has made me feel SOO much better and has really helped my skin glow. I am no nutritionist but I really wanted to share this meal because although its not incredibly healthy, its a nice, quick meal that's better then many alternatives that we grab for daily. Healthy eating is about taking small steps and finding alternatives that you enjoy. Though I am an active person, I have struggled with weight my entire life and the idea of diet has never worked for me. Healthy eating is a life commitment, not some 3 week phase and I have found it much easier to make small replacements of products I enjoy then rule them out completely. Its taken me 20 years but I am finally at a place where I can separate health and weight, and though to some aspect I will always want to look like a 120lb model, thats not how my body is made and its really important to separate health and weight. Society makes the assumption that most skinny people are healthy and larger girls aren't but thats not always the case. Every body has a healthy weight and its more about correctly fueling the body through healthy food and exercise then that number the scale says. Obviosly its hard to be 400lbs and healthy but as a society we need to stop associating the two and striving to loose weight and work more towards a healthier, sustainable lifestyle. Sorry that got a little deep <3 Lissa I love Pizza, Yes I Do.... I love pizza how about you! Ok maybe I don't really love pizza but I had a drunk craving for it this past saturday and because of the lovely snow storm no one was able to deliver. I was even going to settle for frozen pizza but as a catholic I decided to give up red meat and apparently ALL frozen pizza is either four-cheese (ewwww) or pepperoni. Basically I was out of luck until todays revelation... PITA BREAD PIZZA. Its a stretch to call this a recipe since its SOOOOO basic so I'll just say its a simple college meal. Because of my picky-ness and current dietary restrictions I made mine pretty simple but GO CRAZY with whatever you like or have in your fridge. Ingredients: ♡ Pita Bread ♡ Marinera Sauce ♡ Mozzarella Cheese Recipe: Im pretty sure everyone knows how to make a pizza. so just skip this.... In case you don't put sauce on the bread... add cheese and toppings of choice. To cook it stick it in the (toaster) oven for about 7 minutes (or until cheese is melted) . I personally like to alternate between Bake and Broil just so it toasts well on both sides. Wait for the cheese to settle a little and done!! <3 Lissa P. S Side story I forgot to mention.... of course my roommates ordered pizza on monday and didn't tell me until after because they "thought I was asleep".... these are the same girls who wake me up just to tell me a story. Personally I have found a strong correlation between eating healthy and working out. When my fitness level is high, I tend to crave healthier food because its what gives me the energy I need yet the second I stop working out, I gravitate towards that bag of marquette bbq chips. Personally the hardest time to stay healthy for me is after dinner. For some reason after 7o'clock comes, all that calorie and sugar counting goes out the door (is there some scientific reason behind this... if so let me know please) but starting off the day right sets the pace well for the remainder of the day. One of the biggest struggles with eating healthy in college is time. With all that students are expected to do now a days, its hard to find the time to make these healthy meals. This is probably one of the easiest meals to make and keeps you satisfied throughout the day. Usually when I get back from practice before I do anything I go and put a pot of water to boil. Since I am usually in a rush in the morning, I typically do stuff while its boiling so I put it on medium heat and drop my stuff off then begin toasting a slice of whole wheat bread and making a cup of coffee. Once the water is at a boil I lower the heat to low (this will slow down the boil, so I wait until its boiling again) then with a colander spoon I mix the water to create a whirlpool effect. Then the egg is carefully slid into the water. I leave it their for a minute or two until it looks cooked and with my colander spoon I gently place tap it on a peace of paper so its not as watery. Once the egg is dried I place it on top of the bread, cut the yolk, add a dash of salt and VIOLA!
In an effort to get fruit into my diet I usually pair this with a small bag of frozen strawberries. I know there is a lot of controversy upon frozen fruits but they don't go bad so I'm more inclined to buy them. I also have my cup of Cafe Bustelo with this. This breakfast is super quick and keeps you satisfied throughout the day. <3 Lissa I don't know it if its just me, but there is nothing more infuriating then putting on a lipstick when your lips are peeling. For Christmas my cousins gave me a Lorac makeup set and it contained the super pigmented Girl Next Door (1495). The color is super pretty but not the most forgiving so I went onto pinterest to find a DIY scrub and a variation of this. I thought I would share it. Ingredients: ♡ Sugar (granulated or brown) ♡ Oil (olive or coconut) ♡ Vanilla ♡ Food Coloring Directions: Start of with an even number or sugar to oil ratio then add 2 drops of vanilla and desired food coloring (*I used dusty rose which is a 3:1 ratio of red and blue). The mixture might be a little liquify at this point so continue to add sugar until you get desired consistency and VIOLA there is your lip scrub. NOTE: this does create a very slight tint because of the food coloring so be warned. I then just put it generously on my lips washed it off. Also this might be common knowledge but applying chapstick before you put on lipstick makes it look much smoother (I just figured this out.....
